Why a 6.5 Grendel in a bolt action?

I'm cheap. So I'll take the kia where i get better gas mileage even when I treat it like a NASCAR. I prefer to be called economical. :-) I have a 7mm mag and 30-06 that are great for elk and bear hunting, but wastes a ton of meat when used just on a deer. So I was looking for and found an efficient hunting cartridge. I like the AR style of rifle for target shooting, but for hunting for some reason I prefer a bolt action.
