What some bigger calibers may give you is more of a chance to benefit from hydrostatic shock (damage to the brain by a shot that impacts well away from the head), but hydrostatic shock is not something that happens reliably with any typical hunting caliber.
If you are incapable of hitting the boiler room (heart/lungs), liver, or CNS, a bigger caliber isn't reliably likely to be much help to you.
