I cannot say this enough times. If you don't do significant damage to the upper CNS, either directly (direct impact of bullet) or indirectly (hydraulic or hydrostatic shock), expect the hogs to run. Fortunately, your sow didn't run.
No reason to be surprised the first sow isn't immediately dead. The shot was aimed and hit well below the spine and well below the brain. You got a lot of hydraulic damage (gelatinized tissue) of largely non vital structures (muscles). The bullet did its job, but in the wrong place.
