Needing Electricity stability (DC vs AC) is primarily a function of the voltage quality from your supplier, plus any EMF distortions your own home equipt might introduce locally. In my years in the Electric industry I have not seen any appreciable charge distortions due to the electrical input; naturally any smoothing out you can do is better but even a battery supply will not completely isolate "airborne" EMF interference from stuff in/around your home. Example if you are in the basement the startup or shutdown of your furnace fan motor will throw plenty of static interference your way. If your scale is near to the cabling in the wall and you run flourescents then the static will filter over to the scale from the cabling. A person is certainly free to pursue voltage purity, if you will, but I am skeptical as to how much it will really do for you.
Also, a comment on the 0.01 gr resolution capability. In medium caliber rifles a 0.1 gr delta powder charge might cause an MV difference of 5-7 ft/sec, which is generally inside of a lot of the SD's people shoot with (precision usually needs +/- 2 SD to say you're within 95% probability of your next shot being at the desired MV value). Only when you have or seek MV stabilities like SD's of 2-3 ft/s, will a 0.1 gr difference be observable. Personally I could see some value in getting a +/- 0.05 gr resolution, but don't see a value in +/- 0.01.
The biggest keys I've seen in using any electronic scale are keeping static-producing motors/lights etc away from it, keeping it at a constant AC air temperature, keeping level and stable- vibration free, eliminating drafts and allowing sufficient warmup before use. And a consistent procedure for weighing loads and using the scale.
I'm not trying to knock OP for wanting to get more precise but just adding some cautions, that you might not get the bang for your buck that you're seeking.
