After watching a couple of videos on the Galil Ace it does appear the 7.62x39 variant uses an AK pattern mag and mag release. As you mentioned the 5.56/223 uses STANG AR-15 magazines. I think a 7.62x39 bolt carrier/gas piston will fit in the 5.56 receiver. I can’t tell if a Galil 7.62x39/6.5x39 size pattern barrel will fit the trunnion and interface with the 5.56 receiver. I think if you could get a 6.5 Grendel barrel for the Galil receiver/trunnion you would have an easier conversion using the CSSPECS 6.5 Grendel AK mag. I think the biggest challenge is getting someone to make a 6.5 Grendel barrel for the Ace if the Ace uses a non standard Ak barrel.
I like your idea of converting the Galil Ace 5.56 to 6.5 Grendel and using AR-15 pattern magazine with the bolt catch. Maybe Krebs or Sven will be able to answer any technical questions in regards to converting the Ace to 6.5 Grendel. Sure would be cool if it is just a barrel and bolt change.
