I was using a similar technique in 6.5*47 until recently. Sizing and seating and progressively seating deeper until the bolt closed. I finally ponied-up for an exemplar case to screw onto the Hornady chamber gauge. I now notice the seating depths are different using the two techniques. Looks like the effort needed to push a bullet against the lands with the Hornady gauge is different to the compound leverage imparted by a closing bolt. My Hornady gauge shows less OAL to touch lands on average than the bolt closing method.
Of interest to some, there is an alternate site that will drill and thread cases for the Hornady gauge. It's a precision bench rest site so rather than give you an off-the-shelf exemplar they use your own spent cases which mimic the shape of your chamber.
While allowing for the difference between Hornady's exemplar and your own chamber is no big deal what it also means is you can get a modified case for a calibre that Hornady doesn't sell.
