I have thought of doing exactly what you're describing because I'm an attention to detail nazi as well, especially when it comes to camouflage discipline, as irrelevant as that may seem to many.
Using thick heavy tape, tape off the carrier everywhere except the face that is exposed when the ejection port door is open. You can then take fine grit sandpaper to the area you want Cerakoted, and prep the area with abrasion in that manner, since the NiB surface is so smooth. The main areas that shouldn't be coated are the 4 guide rails that actually touch the inside of your upper receiver.
After a sufficient surface abrasion is achieved, where the high polish sheen of the NiB surface is now dull, remove the tape and aggressively degrease the carrier while only handling with gloved hands from then on. After being degreased, give it an acetone bath, let dry, and apply high temp oven tape, leaving only the ejection port area exposed. Then spray on the coating. Air dry and bake.
