Brad,

The CZ 527 is certainly the easiest way to go, simply a rebarrel. Lothar Walther makes the barrels and if you do a google search for "cz 527 stocks" you'll get several options for wood laminate and composite stocks. I plan on building one for my wife when I finish the two AR's I'm working on now.
