Do paypal with the "gift" option so as to avoid the paypal fee. We did a fundraiser with T-shirts to help fund an upcoming baby adoption. This method works fine.
The only issue is that when somebody sends a "gift" through paypal you don't automatically get their mailing address, so each person can send you their mailing address when they pay.
That's the way I would do it. Since you are creating a spreadsheet to track this method should work fine for you to track payments and addresses.
