WRT a velocity plateau, can you please expand on this? Is a plateau considered a good thing? Or indicative of any more powder will be blown out of the muzzle?

The flat spot I.E plateau is where your sd and es numbers are going to be there lowest and tightest. So if you find the charge in that flat spot that gives the best of those numbers and then work your seating depth.
You will have the best load for your rifle to as far as you care to shoot it.
