The only source I know of for left hand 6.5 Grendel bolt is Maxim. I’ve read that a left hand bolt will normally function with a standard mil spec barrel extension. I have never built a left hand AR-15 so I have no personal experience. You might search this forum as left hand 6.5 Grendel have been discussed in the past.

One possible source for all the other parts to complete your build is JSE Surplus. JSE carry left hand uppers and 6.5 Grendel barrels from different manufactures. Some of the barrels sold by JSE Surplus are head spaced to use .125 bolt face depth 7.62x39 bolts referred to as Type 1 bolts. You could use a barrel chambered to use x39 .125 bolt and use a left hand x39 bolt which might be available from more vendors compared to .136 6.5 Grendel bolt.
If I were building a left hand 6.5 Grendel I’d stick with the 6.5 Grendel bolt with .136 bolt face depth.
