For MV and explosive results, I prefer the 95 VMax and the 85 Sierra HP Varmint. Run at ~ 2650-2700 fps, they are devastating.
Using 100 'ASL and 65 degrees, 6" vital zone:
With the Sierra @ 2700 fps, PB shooting out to 225+ yards, 2.9 mils of hold at 400 yards.
With the 95 VMax @ 2650 fps, PB shooting out to 230+ yards, 2.3 mils of hold at 400 yards.
My shooting is at one mile elevation, so my PB is much longer, but at 100 'ASL, these #'s show excellent potential for your purposes. Plenty of stand-off range.If it's true that we are here to help others, then what exactly are the others here for?

ASL- above sea level.
PB - also known as PBR is point blank range. It’s the range at which you can hold dead center and hit a certain size vital zone. Example : 6” vital zone on a coyote. With a 123 grain eld-m traveling 2540fps, your maximum PBR would be 357 yards if zeroed at 200 yds.
The 85’s are still available if you hunt them down. They are discontinued howeverMember since 2011, data lost in last hack attack

I've been using 120 grain Barnes TSX and it's been extremely lethal on everything, to include Coyotes. I'm working some 100 grain TTSX loads I plan to test and use soon. These are some Coytoes I've taken with Barnes 120 TSX at ranges from 50 yds to 300 yds.

Coyotes are small. You can kill them with just about Grendel bullet, no problem. The big key for you is likely going to be accuracy over anything else, particularly at 300-400 yards. As you don't seem to be worried about preserving the coat, I would choose what shoots best out of your rifle that isn't simply a ball round. ELD-M(atch) that will likely be one of your more accurate, less expensive, expanding choices.Kill a hog. Save the planet.
